Chocolate Exquisite goes Cluizel

Chocolate exquisite is pleased to announce that they have converted to the Michel Cluizel chocolate as its working chocolate. Michel Cluizel is a 3rd generation family owned cocoa processor based in Normandy, France. They are considered to be one, if not the best, of the top cocoa processors in the world. They distinguish themselves through their absolute commitment to quality and high standards. This is achieved through their close relationships with select plantations whereby they obtain the highest quality cocoa from the crop, and their active implementation of their ethical position to ensure that the workers are treated and paid fairly. Furthermore, Cluizel does not use soya lecithin, or any other emulsifier, in the production of their chocolate.

Chocolate Exquisite of Edmonton is completing its third year of business manufacturing chocolate product on the premises. The chocolate used is 72% dark and 45% milk (with a sugar content equivalent to a 70% dark) compared to the 50 – 55% dark and 33% milk commonly used. The fillings are rich rather than sweet all filled with a classic ganache of dairy (cream and a bit of butter) and chocolate and are complemented by real or natural flavouring. No additives or preservatives are utilised.

Chocolate Exquisite also carries a line of single origin chocolate – made from specific beans from a single growing area. The 16 chocolates were chosen from about 55 single origin candidates from different manufacturers on the basis of quality and distinctiveness of flavour. Of the 16, 8 are considered to be 1er cru de plantation (the select of the beans from a single plantation). The single origin chocolates vary in intensiveness and intrinsic flavour based upon the variety of cocoa and the soil and mini environment. Included in this line are two special blends of 85 and 99 %. These chocolates are available in 6 gram mini bars and shortly in 25 gram bars both made and hand wrapped on premises. The latter bars will be available shortly on a variety of locations in Edmonton and select locations in Canada. Also available are private and corporate team building tasting of the entire line.

Chocolate Exquisite caters to the chocophile and companies who realizes that all chocolate is not created equally. A unique selection of gift boxes is available with the introduction this year of magnificent wood boxes from France. In addition many corporations and wedding utilise Chocolate Exquisite for banquet favours. Chocolate sculptures are made to order. More information and pictures may be seen on chocolateexquisite.ca. Chocolate Exquisite has a box policy – we ask that the purchaser not throw away their packaging. When they come in again, and re-fill their box, they receive a free chocolate for the re-use of the packaging. Truly favourable for all parties!
